I’m told it’s National Pancake Week. If I’d known this earlier, I would’ve made pancakes this weekend to celebrate . Yeah, y’all know me, I’m always looking for an excuse to celebrate.

So in honor of National Pancake Week, I’m posting up a picture of the pancakes we made a while back. Lately we’ve progressed to pumpkin pancakes which are priceless as silver bullion, I tell ya!

They’re not only healthier but also much tastier than normal pancakes. I’ve noticed a number of pancake restaurants have opened up so pancakes must be pretty trendy these days. I just wouldn’t pay a bundle to eat them outside when I can so easily, and cheaply, whip up my own unlimited supply at home .
