two-toned agar-agar jelly
Right, so my 16-year-old and her friends have planned a surprise birthday party for one of their friends. First they’re going to play tennis, then have a swim and end up with a simple lunch poolside.
One of the mothers was making sandwiches and salad. I made them raisin cupcakes. Since our days are blazing hot, I also decided agar-agar, or jelly will beat the heat and it’s also one of the best forms of acne treatments, believe it or not.

I used regular, not Konnyaku, agar-agar strands, not the powdered form. I toss them in a pot with about 1000ml of water and 5 heaped tablespoons of sugar to boil.

Once the gelatin is completely dissolved, I scoop half into another pot and add blue coloring to fill the bottom half of my jelly mold. I put them aside to set.

Meantime, I add yellow coloring to the agar-agar in the first pot.
Once the bottom half is set, I put half a longan (I used canned longan) in the middle of the mold, and gently pour in the yellow agar-agar to fill up the mold, ensuring the longan stays in the middle. Chill the entire batch in their molds till ready to eat.
You can use fresh fruit or canned fruit cocktail as well to pretty up the jelly. They look pretty and are very cool and refreshing on a hot day.
