four foods on Friday #44 – potatoes
It’s time to play Four Foods again. School is back and I’m on the prowl for quick menu ideas again. Potato is our family favorite and I can’t wait to get some ideas from the other FFOF players this week.
#1. Potato Chips. What kind of chips are your favorite?
I love sour cream and onion, spicy, cheesy.
#2. What’s your favorite thing to dip chips in?
I eat my chips plain, no dips. But if I had to choose, I’d say spicy salsa, guacamole and onion dip.
#3. What’s your favorite way to eat a baked potato?
I like my baked potato with bacon bits, sour cream and chives. But when I do them at home, I usually go with corned beef, bacon and green onions and a sprinkling of cheese (if I happen to have some around).
#4. How do you make mashed potatoes?
Slice the potatoes. I used to chunk them but slices cook faster. Boil them up till soft. Mash them up with some butter. Finish off with a generous sprinkle of parsley. I think that’s it

Ooh sour cream and onion chips. I haven’t had those in forever! We’re doing a picnic Monday, perhaps I’ll pick a bag up!
Potatoes are one of those things that you can add just about anything to it and it’s a great meal.

Corn beef? I had never heard of putting that on a baked potato. I guess I will have to try it. Hmm guacamole, never did like the stuff.

Corn beef on a baked potato, yep, they serve it at the deli, that’s where I got the idea. It tastes pretty good.

Oh I love corned beef, but I’ve never heard of using it as a topping.
It’s been a long time since I’ve had corn beef. I would be willing to try it on a baked potato.

Go ahead and try it. It’s very yummy. I first tasted it at Oliver’s Sandwiches which serves a great selection of baked potatoes with different toppings.
I have not cooked corned beef since last year. I will give this a try.:)
