Looks like it’s time to play Four Foods on Friday again. Last week, I was such a scatterbrain I forgot to write up a little something before I posted my answers to the questions.
#1. When you need to serve desserts, do you buy them or make them?
I usually buy but if I have time, I prefer to make them myself.
#2. When baking do you use butter, margarine or something else?
I use butter.
#3. What meats or veggies do you cook in the oven?
If I’m grilling chicken, I’d throw in some potatoes, carrots and celery.
#4. Share a recipe for anything that is cooked in an oven.
I’m going to try oven-baking my own chicken fingers today
. There’s no recipe for it per se. I just made it up in my head this morning. Talk about winging it!!
I’ve got 3 chicken breasts which I’ve cut into broad strips. I’ve been marinating them in salt, sugar, pepper and chilli powder for an hour now. Just before I put them in to bake, I reckon I’ll just dredge them in flour and finely-grated parmesan cheese.
Let’s see how this turns out
. I’m going to serve it up with french fries. After all, it’s Friday, let’s keep lunch simple, okay, kids?

Your chicken fingers sound great. I do those all the time. I like to bread mine in panko with parmesan or crushed macadamia nuts. Mmmm

I was going to make my own breadcrumbs. But the weather’s been cloudy, not fiercely sunny like it is most of the year (dang!). So I used poppy seeds instead

I threw in a handful of poppy seeds. So it was extra-crunchy and golden brown (forgot to snap a photo!) but too bland. I’m notorious for under-salting because I have a thing against high-sodium intake.
We ended up dipping them in some leftover brown sauce from my roast chicken the night before. So that worked out, um, not too bad

Do you use cooking spray or a little oil to bake your chicken fingers? They sound really good, especially with some cajun seasoning or additional salt & pepper…

We make our own chicken strips too, with parmasean and bread crumbs.

I usually add a bit of parmesan and cayenne pepper when I put breadcrumbs on things. Nice to see I’m not the only one with the parmesan love.

Yes, I do use just a drizzle of olive oil. Thanks for picking that up.
Cajun seasoning would’ve been great too but I didn’t have any around at the time, so I went with chili powder instead.
